Winemaking:
This emblematic cuvée from Château Fayau is crafted through meticulous manual harvesting by successive passes (tries successives), ensuring only the ripest and most botrytised grapes (those affected by the famous “Noble Rot”) are selected at optimal maturity. The Noble Rot is a natural phenomenon that shrinks the grapes and concentrates the sugars and flavours in the really exotically decadent juice that results. The dominance of Sémillon provides richness and texture, while Sauvignon Blanc and Muscadelle contribute aromatic lift and freshness.

Tasting Note:
Château Fayau Cadillac 2014 is aged, ready, and a genuinely radiant dessert wine that captures the warmth and charm of its terroir. The nose is hugely lifted, offering a vibrant medley of tropical and orchard fruits—pineapple, ripe apricot, and candied orange peel—layered with hints of honey and delicate floral notes. There is a lifted freshness that keeps the aromatics bright and enticing.

On the palate, the wine is lusciously sweet yet wonderfully balanced, with a silky texture that glides effortlessly across the tongue. Flavours of exotic fruit, marmalade, and stone fruit are complemented by a refreshing acidity that prevents any heaviness, giving the wine a sense of lightness and poise. The finish is clean, lingering, and gently honeyed, leaving a delightful impression of both richness and finesse.

A true “ray of sunshine” in the glass, it is perfect as an aperitif or paired with Thai prawns, fruit tarts, chocolate desserts, or blue cheese is my personal favourite, especially Roquefort. Drinking beautifully now, with the capacity to age gracefully for 10 years and beyond.
