La Méthode is a wonderfully distinctive proposition: a dry sparkling white from Gaillac made entirely from the heirloom Mauzac grape. Golden yellow in appearance and slightly hazy, it immediately sets itself apart from more conventional sparkling styles. The nose is inviting and fruity, led by tart green apple, pear, and lemon sorbet, but the real story is the wine’s exceptional complexity and individuality. At just 9.5% alcohol, it offers character without weight, grounded in the gravelly terroir of Gaillac.

On the palate, the bubbles tease and enliven, waking up the fruit and giving the wine an energetic, playful feel. Stainless-steel winemaking and the complete absence of oak maintain freshness and precision, while Mauzac supplies the personality.
