Vinification: Carefully selected Chardonnay fruit is gently pressed to retain purity and finesse. Primary fermentation takes place in temperature-controlled stainless steel tanks to preserve vibrant fruit character and varietal freshness. Malolactic fermentation is completed to enhance texture and balance.

Maturation: Matured on lees for 30 months before disgorgement, developing complexity while maintaining freshness. A further period of bottle ageing ensures excellent integration prior to release.

Tasting Note

Elegant and expressive, Charles Mignon Blanc de Blancs showcases the precision and refinement that Chardonnay brings to Champagne. Delicate aromas of white blossom, lemon zest, green apple and ripe pear are complemented by subtle notes of brioche, toasted almonds and fresh pastry derived from extended lees ageing. The palate is vibrant and finely textured, with lively citrus fruit, crisp stone fruit and hints of hazelnut supported by a persistent stream of fine bubbles. A bright mineral backbone carries the wine through to a long, clean finish that is both refreshing and sophisticated. This Champagne is wonderfully versatile, making it an ideal aperitif while also pairing beautifully with freshly shucked oysters, scallops, grilled prawns, sushi, creamy poultry dishes and soft-ripened cheeses. Although beautifully balanced for immediate enjoyment, careful cellaring for 3–5 years will reward with additional complexity, richer brioche characters and enhanced texture without sacrificing its hallmark freshness.
