I went into my tasting of this thinking it was going to have to be something very special if I was going to open up our wine portfolio to an apple cider but it simply blew me away! Forget every industrial cider you might have ever tried in your life, and yes, the nose here does scream “APPLES!”, but this idiosyncratic elixir goes far beyond what a simple apple can offer with magnificent spice, ginger, leather, smoky oolong tea, and a feeling of pristine earthiness, that plunges you into a dry palate of swirling crystalline fizz. After delivery, this cider requires several days in the fridge to fully reabsorb its fizz, and open with care (hand over cork, removing it slowly).
