La Fon du Berger 2016 now shows the graceful evolution of a well-matured Haut-Médoc, with a palate that has softened beautifully over time. The nose opens with classic aromas of blackcurrant and dark plum, layered with dark chocolate, black tea, and earthy nuances. Subtle hints of forest floor, dried red berries, and Moroccan leather add depth and aromatic intrigue, underscoring its mature character.
On the palate, the once-firm structure has relaxed into a more supple and harmonious expression. The tannins, previously tight, have rounded into a velvety, polished texture that supports rather than dominates the fruit. Medium-bodied and balanced, the wine carries flavours of cassis, cocoa, and gentle spice across a refined, earthy core. There is an appealing smoothness through the mid-palate, with integrated oak and a savoury complexity that lingers gracefully.
The finish remains structured yet elegant, showing poise and persistence rather than austerity. Drinking beautifully now with decanting, it will continue to offer pleasure through 2030 and beyond. An excellent match for roast lamb, duck breast, or mushroom-based dishes that echo its earthy sophistication.
