This is a dry style of sparkling wine, fermented in the bottle like Champagne but that’s where the comparisons end because this wine is aged for three years on its yeast lees before disgorgement and release, consequently offering magical fruit depth and complexity with floral notes, crême brûlée, lanolin, talcum, honey, and golden ripe peaches, while the palate is crisp and cleansing, flavoursome, tingly, and long. Like all wines made from Chenin Blanc, these bubbles also reward cellaring, developing rich complexity with five or ten years of age.
