Seriously classy Pinot Noir of depth and elegance. This is no fruit bomb and the dark cherry aromatics have a savoury and earthy intensity but there is still that vibrant prettiness so typical of Pinot Noir from Alsace but mellowed out and softened by this wine’s time in ancient and large-format oak vats in the cellars of the medieval Hospices de Strasbourg, a religious institution-turned-wine cellar. There are notes of cedar and oak, smoke and tar, truffles and rocks, while the palate is tall and stately, balanced and long, with very fine tannin running down its backbone.
