Grape Variety: 100% Chardonnay
ABV: 13%
Vineyard: 25-year-old vines planted at 350–450 metres altitude. From the same area where Limoux’s celebrated sparkling wines are made.
Vinification: Fermentation starts in stainless steel vats before transfer into 500L French oak barrels (40% new).
Maturation: Aged on fine lees for 8 months. “Sur Lies” means that the wine is aged on the flavour-nourishing yeast lees that settle to the bottom of a barrel and enhance the wine’s taste and texture while helping create seamless integration of the oak.

A strikingly beautiful Chardonnay delivering Burgundian poise with Mediterranean generosity thanks to its high altitude vineyard location. Aromas of white peach, lemon sorbet, nectarine, rock melon and ginger unfold gracefully, underscored by delicate hints of orange marmalade and a subliminal whisper of oak.
The palate is soft, dry, and light, with a silken texture lifted by bright acidity and framed by subtle lees-derived creaminess. There’s precision and purity here, with oak playing a quietly supportive role—never overpowering, always enhancing.
Perfect with grilled scallops, creamy poultry dishes, or a cheese soufflé, this Chardonnay drinks effortlessly now but will reward cellaring through to 2028.
